Okinawan Pork

Ingredients:

2 lbspork belly
6 clovesgarlic
2 inchesginger
½ cupwater
½ cupshoyu
½ cupsake
½ cupbrown sugar
2 tbspmirin

Directions:

  1. Cut pork belly into 1 inch thick pieces
  2. Mince garlic and ginger
  3. Mix the water, shoyu, sake, brown sugar, and mirin in a bowl
  4. Brown the pork belly
  5. Add the minced garlic and ginger, mix with the pork, and saute for approximately 1 minute
  6. Add the water, soy sauce, sake, brown sugar, and mirin mixture
  7. Bring to boil and cover
  8. Turn the heat to low and let simmer for about two hours or until the pork can be pierced with a fork easily
