Tofu Salad

"It’s a recipe we share as a family and yet depending on who makes it, it tastes a tad bit different. Granny used to use tuna in her version. Aunty’s was a little saltier, probably the brand of shoyu. I’ve started using salmon instead of tuna and my daughter seems to like it better." -- Helena Kodani


Ingredients:

Dressing:

1/2 cupoil (sesame + vegetable)
1/4 cupshoyu
3 clovesgarlic

Salad:

1 bunchwatercress, blanched
1 blocktofu, drained and cubed
2 - 3tomatoes, diced
1onion, thinly sliced
1 - 2 canssalmon

Optional:

To tastebean sprouts
To tastegreen onion
To tastetoasted sesame seeds

Instructions:

Dressing:

  1. Warm oil, add garlic and brown
  2. Add sliced onions
  3. When cooled, add shoyu

Salad:

  1. Layer tofu, watercress, salmon and tomatoes
  2. Pour dressing on top of layered vegetables
  3. Chill in the refrigerator before serving
