Sardines and Long Rice

Linda Inouye grew up watching her Mom, Nora Acoba, cook many wonderful Filipino dishes – using fresh vegetables from her garden. Linda refers to this particular dish as “peasant food,” as the ingredients are simple and inexpensive. Nonetheless, it is delicious and nutritious!

Ingredients:

1 pkglong rice – 7.75 oz
2 canssardines in tomato sauce - 15 oz. - California Girl, preferred brand
½round onion
2 clovesgarlic, minced
3 tbsoil
2 tbspatio, or fish sauce
5 cupswater

Instructions:

  1. Soak long rice in water one hour before cooking, then cut in thirds with kitchen shears
  2. Heat oil in a large pot
  3. Add garlic and onion to pot – stir often – until aromatic and golden brown
  4. Add water and bring to a boil
  5. Add patis, followed by the long rice
  6. Lower heat and add sardines with tomato sauce
  7. Stir gently to keep sardines from breaking apart and to prevent long rice from sticking to the pot
  8. Dish is complete when long rice is transparent and has absorbed most of the liquid
