Portuguese Bean Soup

Bruce Jacintho learned how to cook by watching his mom. Along with homemade bread, soups were made often because it fed a lot of people. Although the recipe has changed a little over the years, Bruce continues to make his mom's Portuguese Bean Soup for the family. Of course, our favorite ingredient is Bruce's watercress!

Ingredients:

1ham shank
15 oz. cantomato sauce
15 oz. cankidney beans
1potato, cubed
1 ½ cupelbow macaroni
1 bunchwatercress

Instructions:

  1. Boil ham shank for 1 hour
  2. Let cool, then shred meat from bone
  3. Add water – enough to cover shank
  4. Add tomato sauce, kidney beans and cut potatoes
  5. Bring to a boil then add elbow macaroni
  6. Once the macaroni is cooked, add the watercress
  7. Stir, cover, then turn off the heat
