Mini Pecan Tarts

My name is Liana Kuʻulei Young and I am 6 years old. I love being in the kitchen and helping my family cook and bake. My favorite thing to do when making the mini pecan tarts is the crust. It's like playing with play doh -- it's soft and I like to smash and squeeze the mixture with my hands. My mom makes these treats for family gatherings -- especially during the holiday season. It's so yummy!


Ingredients:

Tart Shells:
1/2 cupbutter or margarine, softened
4 ozcream cheese, softened
1 cupall-purpose flour
Filling:
1 cuppecan halves
3/4 cuppacked brown sugar
1egg
2 tbspbutter or margarine, melted
1 tspvanilla

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit
  2. Beat butter and cream cheese in a medium bowl until well-blended
  3. Add flour, mix until a soft dough forms. Shape dough into 1 inch balls.
  4. Place balls into ungreased wells of a mini-muffin pan
  5. Dip mini-tart shaper into flour; press dough with even pressure until dough rises slightly above rim of pan
  6. Combine pecans, brown sugar, egg, butter and vanilla. Mix well
  7. Fill each tart shell with 1 tbsp filling -- do not overfill
  8. Bake 20-25 minutes or until light golden brown
  9. Remove pan from oven and cool for at least 3 minutes
  10. Remove tarts from pan and cool completely
