Grandma’s Chi Chi Dango

Chi Chi Dango is special to me because my Grandma makes it. I also like the taste of potato starch that covers the Chi Chi Dango.


Ingredients:

16 ozmochiko flour
2 cupssugar
13.5 ozcoconut milk
13.5 ozwater
1 tspbaking powder
1 tspcoconut extract
4+ dropsfood coloring of choice
1 bagpotato starch

Instructions:

  1. Preheat oven to 350 degrees
  2. Spray 8 x 10 pan evenly with cooking spray
  3. Stir mochiko flour, sugar, coconut milk, water, and baking powder together
  4. Add coconut extract and stir
  5. Stir in food coloring of choice
  6. Pour ingredients into greased pan and cover with tin foil
  7. Bake for 1 hour
  8. After 1 hour, turn off oven and leave pan in oven for 15 minutes
  9. Remove pan from oven
  10. Remove tin foil and let cool, approximately 2 hours
  11. Cut into pieces with a plastic knife or scissors
  12. Roll each piece in potato starch
  13. Enjoy!
