Grandmama's Shoyu Chicken

This dish is a part of our island culture because it is a local family classic. My mom was taught by her parents and now enjoys cooking this dish for us!


Ingredients:

5 lbsbone-in chicken thighs
2 1/2 tspgarlic puree
1 1/2 tbspWorcestershire sauce
1 1/4 cupsshoyu
1 cupsugar
3 tbspapple cider vinegar
1/4 tspfreshly ground black pepper
2 ozpeeled and crushed fresh ginger
3 tbspall-purpose flour
3 tbspwater

Instructions:

  1. Mix all the ingredients in a bowl, except the chicken, flour and water
  2. Over medium heat, add the chicken to a large saute pan and pour in the sauce. Bring to a boil.
  3. Lower the heat and simmer for 40 minutes, skimming off any fat on the top
  4. Bring to a boil again
  5. Mix all-purpose flour and water to form a slurry, then add it to the pot. Lower the heat and let simmer for 10 minutes for sauce to thicken.
  6. Turn off the heat and enjoy!
