From Mangos to Bread
Ingredients:
| ½ cup | butter, soften |
| ½ cup | Canola oil |
| 1 ½ cups | raw brown sugar, Kirkland organic sugar |
| 3 | eggs, extra large |
| 1 tsp | vanilla |
| 2 tsp | baking soda |
| ½ tsp | salt |
| 2 tsp | cinnamon |
| 3 cups | diced mangos |
| ½ cup | raisins |
| ½ cup | chopped nuts |
| ½ cup | shredded coconut |
| 2 cups | flour |
Instructions:
- Cream the butter, oil and raw brown sugar
- Add eggs, vanilla to the creamed mixture, and beat well
- Stir in baking soda, salt, and cinnamon, mix well
- Add mangos, raisins, nuts and coconut, mix well
- Add flour, mix
- Pour into ½ pound loaf pans – should make 6 pans
- Let sit for 20 minutes
- Preheat oven to 350 degrees and bake for 45 minutes or until brown
