From Mangos to Bread

If you met Sandi Kato-Klutke. you know this pettite lady packs a punch! When she’s not engaged in serving our community, she’s in the kitchen cooking, baking, and making her well-known takuwan, sanbai zuke, cucumber kimchee, and bread and butter pickles. She shared with us her delicious mango bread recipe.


Ingredients:

½ cupbutter, soften
½ cup Canola oil
1 ½ cupsraw brown sugar, Kirkland organic sugar
3eggs, extra large
1 tspvanilla
2 tspbaking soda
½ tspsalt
2 tspcinnamon
3 cupsdiced mangos
½ cupraisins
½ cupchopped nuts
½ cupshredded coconut
2 cupsflour

Instructions:

  1. Cream the butter, oil and raw brown sugar
  2. Add eggs, vanilla to the creamed mixture, and beat well
  3. Stir in baking soda, salt, and cinnamon, mix well
  4. Add mangos, raisins, nuts and coconut, mix well
  5. Add flour, mix
  6. Pour into ½ pound loaf pans – should make 6 pans
  7. Let sit for 20 minutes
  8. Preheat oven to 350 degrees and bake for 45 minutes or until brown
