Chocolate Chip Macadamia Nut Banana Bread

The original Banana Bread recipe was handed down to Sharyl Lam Yuen by her mom, the late Irene Maeda of Kapa‘a. Whenever we have ripening bananas from our farmers, Sharyl makes banana bread for the office. She shared the recipe with Sharon Sahara, who added her twist to make a Banana Bread with Chocolate Chips & Macadamia Nuts. Simply delicious!

Ingredients:

2 - ½ cupscake or all-purpose flour
1 tspsalt
2 tspbaking soda
1 cupbutter margarine
2 cupssugar (reduce to your liking)
3 largeeggs
6ripe bananas, mashed
½ cupchopped macadamia nuts
¾ cupsemi-sweet, milk or dark chocolate chips

Instructions:

  1. Sift flour, baking soda, and salt – 3 times, and set aside
  2. Cream butter and sugar until fluffy
  3. Add eggs one at a time – mix well
  4. Add dry ingredients to the butter-sugar-egg mixture, alternating with the mashed bananas and ending with the dry ingredients – Do not overmix
  5. Gently fold in the chocolate chips
  6. Lightly grease two 1 lb. loaf pans and distribute batter evenly
  7. Sprinkle chopped macadamia nuts over the top – mac nuts will be crisp and toasty
  8. Bake at 350 degrees for about one hour, or until done
