Calamansi Bars

It seems like calamansi trees always have a lot of fruit. I really like the fruit in my drinks but wanted to see if I could do more with them. Since calamansi is tart, I figured I could throw it in a lemon bar recipe! It’s a good treat warm or cold, making it a perfect snack for the beach, and is a favorite amongst Kōloa School teachers!


Ingredients:

Crust:

1 cupbutter
1/2 cupconfectioners sugar
2 tsplemon zest
1-3/4 cupall-purpose flour
1/4 tspsalt

Filling:

4eggs
1-1/2 cupsugar
1/3 cupflour
1/2 tspbaking powder
1/3 cuplemon juice
2/3 cupcalamansi juice
2 tsplemon zest

Instructions:

  1. Preheat oven to 350 degrees
  2. Cream butter and sugar. In a separate bowl, combine flour and salt. Gradually add into the creamed mixture.
  3. Press into a greased 13 x 9 pan. Bake 15 minutes until lightly brown.
  4. Beat eggs and sugar
  5. In a separate bowl, combine flour and baking powder. Gradually add into egg mixture.
  6. Stir in lemon juice, calamansi juice, and zest. Beat until frothy.
  7. Pour over hot crust
  8. Bake 20-25 minutes, or until golden brown. Cool on wire rack. Dust with confectioner’s sugar
  9. Store in refrigerator
