Ah-ma’s Xifan -- Taiwanese Grandma’s Rice Porridge
Ingredients:
| 8 cups | water or chicken, vegetable, or beef stock |
| 3/4 cup | long grain rice |
| Optional | celery, minced |
| Optional | chicken, shredded |
| Optional | green onion, minced |
| Optional | ginger |
| 1 tsp | salt |
| To taste | cilantro |
Instructions:
- Cook the rice in your choice of liquid -- water, chicken, vegetable or beef stock -- until it is a thick porridge-like texture. You can cook the rice in a pot, instant pot, or crockpot.
- Add the salt, chicken and celery 10 minutes before the rice is done
- When the porridge is done, pour it into a bowl and serve. You can add green onions, cilantro, ginger, or even more chicken! Enjoy!
