Kale Pasta

Kale pasta is the only way I'll eat vegetables, especially kale. My mom grew kale in her garden boxes in our yard. When COVID happened, our family would get the weekly vegetable/fruit bags at the school and also had boxes delivered to our house during the summer. Those bags/boxes always had a fresh bunch of locally grown kale. I love pasta and kale pasta is easy to make and a great way to use up the big, bushy bunches of kale.


1 poundshort pasta -- like fusilli, rotini, penne
1 bunchkale, stems removed and chopped
1 tbspolive oil
1 traysweet Italian sausage, crumbled
1/2 tspminced garlic
1 tspred pepper flakes
12-15cherry or grape tomatoes
1/2 cupparmesan cheese


  1. Boil salted water for pasta, cook until al dente, keep one cup of the water before draining
  2. Blanch kale and set aside
  3. Heat olive oil over medium heat, add sausage, and add garlic and red pepper flakes
  4. Add kale and cook for 2-3 minutes
  5. Add tomatoes and cook until they soften
  6. Add pasta, pasta water, and parmesan cheese
